Take a Penny, Leave a Penny!

Close to three years ago, karnythia hosted an LJ post where she asked people to leave a comment if they had something they wanted or needed, or if they had something they were willing to give or offer.

I got two things: yarn and friends.

This is how I met rosefox, who has since become one of the people in my life whom I value most.

So I've been thinking a lot lately about that and what a big impact it had on my life over the past three years. And it made me want to do it for other people.

Ah, Lexington... I know people who used to live there. It's better than most of the rest of the state, but I'm still sorry.

As to low carb recipes, how low are you talking? I've been moving to or solidly in the paleo camp for a couple of years now, and while I don't pay much attention to carb counting, I've become good at making meals without much of a starch component & am becoming a much much better cook in the last few years. Still trying to learn enough AIP recipes to give that a try, but doing so much better on just regular paleo (and had enough life drama) that I haven't quite managed the motivation to push myself on that.

I make a seriously delicious chili in large batches, but it seriously fails the AIP nightshade thing. I can share if you're interested. I ocassionally do a ridiculously good crustless quiche, though not frequently anymore because dairy.

My current project is chocolate pancakes. I've had good results with flourless and coconut flour, and next I want to try almond flour, rice flour, and potato flour variants. (None of which win the Paleo AIP roulette, true... But my foodie instincts often win out over strict paleo, so long as its strictly gluten free.)

Anyhow, it sounds like we can talk food. I don't hang on LJ much these days, but if you're on twitter or even FB and willing to share that info, I tweet like a crack monkey, often about food.

I hadn't been counting either. Unfortunately my immune system's latest stupidity resulted in my body not metabolizing carbs properly. I'm supposed to be 20-30 g per meal, 100 g per day. The only nightshade that gives me trouble is tomato. Cooked seems to do better than raw but I love pico de gallo so I chance it sometimes.
